We love roasting coffees that feel like clear expressions of place, variety and process — coffees that are clean, intentional and quietly beautiful.

This Pink Bourbon comes from Linarco Rodriguez in Palestina, Huila, Colombia. The Rodriguez family farm has been passed down through three generations for almost 60 years and is now shared between seven siblings, each managing their own section of the land. With their own wet and dry mills, the family is able to maintain close control over every stage of production, from cherry selection to drying and preparation.

For us, this is a beautiful reference point for washed Colombian Pink Bourbon. It carries the clarity and structure we look for in washed processing, while showing the sweetness, elegance and delicate fruit character that make Pink Bourbon so special.

The process is simple and considered. Ripe cherries are first floated to remove impurities, then pulped and fermented in open-air tanks for 48 hours at around 15°C. After washing, the coffee is dried in parchment over 25 days, before being rested to allow moisture content and activity to stabilise.

In the cup, expect floral aromatics, soft apricot sweetness and a clean white grape finish. Bright, elegant and expressive — exactly the kind of washed Pink Bourbon we love to roast.
