Imagine beans with a story this big! We've managed to secure a rare 12kg from an extraordinary lot steeped in rich Nicaraguan heritage. These beans come from the legendary Mierisch family, whose expertise spans over a century of coffee cultivation.Their Fincas Mierisch network includes nine farms in Nicaragua and three in Honduras.This particular gem is sourced from the Limoncillo farm in Matagalpa, overseen by Fausto Martinez.
Spanning 119 hectares, 54 of these are preserved under the Rainforest Alliance and hold UTZ certification. The farm's name, "Limoncillo," honors the small lemon trees that were flourishingthere when it was first acquired.
Its unique microclimate, with daily temperatures ranging from 17-25°C, nurtures a variety of exceptional coffee plants: Javanica, Red and Yellow Pacamara, Ethiosar, Red Catuai, and Red Bourbon.Our lot is a standout: the black honey processed Yellow Pacamara. This unique mutation of Red Pacamara is incredibly rare-only 10% of Yellow Pacamara crops remain yellow, while the rest revert to red! Such meticulous farming techniques have been perfected over generations of the Mierisch family, who have played a pivotal role in advancing the Cup of Excellence competition in Nicaragua. What sets this coffee apart? Its dazzling sweetness and lively acidity.
