This year’s Mora Layo and Bowicha lots showcase the peak of high-altitude Ethiopian coffee. Grown in the Choriso district of Yirgacheffe (within the wider Gedeo Zone) and processed at the Haroberdame Washing Station, these coffees deliver remarkable depth and layered complexity—shaped by elevation, terroir, and meticulous processing.

At high elevations, cherries mature more slowly, allowing greater development of sugars and acids, which translates to a more complex cup. The coffee is hand-picked by 257 smallholder farmers, each managing tiny plots of just 0.375–0.75 hectares. Their semi-forested farms are intercropped with enset (false banana) and legumes—supporting soil biodiversity while providing natural shade for the coffee trees. Plantings feature a blend of heirloom varieties, Dega and Kurume.

Processing follows a classic natural method. After careful selection, cherries are sun-dried on raised African beds for over 20 days, turned regularly to ensure even drying. This slow, controlled drying is essential to building the signature fruit-forward character and aromatic intensity of naturally processed Ethiopian coffee.
