The mill works closely with smallholder producers around the Pantan Musara villages, collecting and processing coffees with a strong focus on quality and traceability. Several years ago, producers in this community were displaced by a natural disaster and later rebuilt their homes and farms, with coffee becoming an important part of their new beginning.\u003c\/p\u003e\n\u003cp\u003eSmall farms are typical across Sumatra, and coffees from multiple producers are commonly blended together. Microlots like this offer greater traceability and represent some of the higher-quality selections from the region.\u003c\/p\u003e\n\u003cp\u003eSumatra is traditionally associated with \u003cb\u003eGiling Basah\u003c\/b\u003e, or wet-hulled processing — a method developed to deal with the island’s heavy rainfall, humidity and difficult drying conditions. Asman Gayo Mill takes a different approach, producing \u003cb\u003efully washed coffees\u003c\/b\u003e alongside naturals. Washed coffees remain relatively uncommon here and can reveal a noticeably cleaner and brighter expression of Sumatra.\u003c\/p\u003e\n\u003cp\u003eFor this lot, cherries are delivered to the mill, depulped and fermented in open-air tanks for up to \u003cb\u003e36 hours\u003c\/b\u003e before being washed clean and carefully dried. The coffee is grown between \u003cb\u003e1,300–1,650 MASL\u003c\/b\u003e, with varieties including Ateng, Bor Bor, Catimor and Timor.\u003c\/p\u003e\n\u003cp\u003eIn our roast, we find \u003cb\u003ejuicy grapefruit\u003c\/b\u003e leading the cup, followed by the soft sweetness of \u003cb\u003efresh apricot\u003c\/b\u003e and a rounded \u003cb\u003ecaramel finish\u003c\/b\u003e.
